Here's the thing-- I love peanut butter. And chocolate. Love. The thing I don't like though, is feeling as though I've gained 25 pounds after cooking a batch of cupcakes (because baking = licking the bowl and eating at least 3, let's be honest.) So when I found this recipe on Sally's Baking Addiction, i knew I had to try them.

Her recipe substitutes any kind of oil/fat for bananas and yogurt, making these cupcakes a slightly healthier alternative to the norm-- but you honestly can't even tell! I made mine with Ghirardelli 60% chocolate chips, Scharffen Berger unsweetened cocoa powder, and non-fat vanilla greek yogurt and they came out absolutely delicious.  I decided to leave out the peanut butter chips, opting instead for just a simple swirl of Trader Joe's unsalted peanut butter (mmm.) 

These even got the stamp of approval from my Dad, who knows a thing or two about chocolate-- he couldn't believe these were made with healthy alternatives.  Definitely recommend giving these a try.
